Vineyards: Espalier-trained with a medium-high density of vines per hectare (4500 plants). Simple Guyot pruning. Yield 100 quintals per hectare.
Climate: Mediterranean, with hot summers and mild winters.
Harvest: Early September
Vinification: Soft pressing of the pomace, maceration on the skins for 10 days. Fermentation in stainless steel tanks at a controlled temperature of 28°/30° C. for 15/20 days (malolactic).
Refinement: 3 months in Allier oak barriques, half of which are new; 6 months of aging in the bottle.
Bottling: Cold sterile with microfiltration and nitrogen back pressure.
